Stone Fruit Cobbler

Ingredients:

4 large or 5 medium peaches, thinly sliced

3 – 4 plums (Ruby Red variety are great for a pop of color!), thinly sliced

1 1/2 teaspoons fresh lemon juice

3/4 cup all purpose flour

1/4 cup cane sugar

1/4 teaspoon cinnamon

1/4 teaspoon cardamom

1/4 teaspoon baking soda

1/4 teaspoon salt

1/4 cup melted coconut oil or unsalted butter

1 teaspoon vanilla extract

vanilla ice cream, for serving

Ingredients:

Directions:

Preheat the oven to 400°F and grease a 9 inch round tin or 9×13-inch baking dish (the beauty of crumbles is their flexibility!) with butter or coconut oil.

Layer the sliced fruit into the bottom of the baking dish and lightly toss with the lemon juice.

In a medium bowl, mix the flour, sugar, cinnamon, cardamom, baking soda, and salt. Add the butter or coconut oil and vanilla and combine until the mixture forms a crumbly dough. Sprinkle over the peaches and bake for 30 minutes, or until the mixture is just lightly browned on top and the fruit is juicy.

Serve warm with vanilla ice cream.
