Overnight Oatmeal

Easy, work-day breakfast: pop the oats in the fridge overnight, and they are ready to grab and go the next morning

Ingredients:

1/2 cup oats

1/2 cup milk or coconut milk

2 tsp maple syrup

a pinch of salt


optional garnishes:

1/2 cup fruit (frozen wild blueberries are especially good)

1/8 tsp almond extract or vanilla

1/4 tsp cinnamon

flax seeds

raisins or other dried fruit

toasted seeds or nuts

yogurt

Ingredients:

Directions:

Combine all ingredients in a mason jar or other container that holds at least 12 ounces or 1 1/2 cups of liquid. Put the jar in the fridge at night.

In the morning, heat the oatmeal until warm. If you use a jar or other microwavable container, you can use that, or put it in a bowl. Then add nuts, additional fruit, raisins, yogurt, and any other toppings you like.

With coconut milk and blueberries, it is delicious to eat cold right out of the jar in the morning.
