
Ingredients:
One dozen hard-boiled eggs
1/3 cup mayonnaise
2 teaspoons Dijon mustard
2 teaspoons white vinegar
1/2 teaspoon kosher salt
1/2 to 3/4 teaspoon curry powder
1/2 teaspoon freshly grated black pepper
Directions:
- Peel your eggs, halve them lengthwise, and put the yolks in a bowl. Arrange empty egg halves on a platter.
- Mash yolks with a fork until no chunks remain. Add mayo, mustard, vinegar, salt, 1/2 teaspoon curry powder, and pepper. Mash until as smooth as possible. Taste for seasoning and adjust, adding remaining 1/4 teaspoon curry powder if desired.
- Use a spoon to put the filling back in the egg halves. Or you can put the filling into a sandwich bag, snip off the corner of the bag, and pipe it into the egg halves.
