Curried Deviled Eggs

These deviled eggs are a delicious twist on the classic finger food. The addition of curry powder is inspired by FRESHFARM Director of Strategic Investments Renee Catacalos, who brought a batch of curried deviled eggs to a staff potluck to the delight of everyone!

Ingredients:

One dozen hard-boiled eggs

1/3 cup mayonnaise

2 teaspoons Dijon mustard

2 teaspoons white vinegar

1/2 teaspoon kosher salt

1/2 to 3/4 teaspoon curry powder

1/2 teaspoon freshly grated black pepper

1/3 cup mayonnaise

Directions:

  1. Peel your eggs, halve them lengthwise, and put the yolks in a bowl. Arrange empty egg halves on a platter.
  2. Mash yolks with a fork until no chunks remain. Add mayo, mustard, vinegar, salt, 1/2 teaspoon curry powder, and pepper.  Mash until as smooth as possible. Taste for seasoning and adjust, adding remaining 1/4 teaspoon curry powder if desired.
  3. Use a spoon to put the filling back in the egg halves. Or you can put the filling into a sandwich bag, snip off the corner of the bag, and pipe it into the egg halves.
  4. Enjoy!
